Overview
Palette Town is the final region in Pokemon Pokopia, and it features a unique set of Pokemon not available through normal region habitats. The signature Pokemon of Palette Town are the Eeveelutions: the eight evolved forms of Eevee. Each Eeveelution has a dedicated food-themed habitat (Habitat Dex entries #202 through #209) that can only be built in Palette Town. Eevee itself can be attracted to the Pretty Flower Bed (#008) when constructed in Palette Town.
All habitat data below is sourced from the verified Habitat Dex. Each Eeveelution habitat requires a Seat, a Table, and a unique food item earned through Special Challenges.

How to Unlock Palette Town
Palette Town becomes accessible after completing the main story quests in all four regions (Withered Wasteland, Bleak Beach, Rocky Ridges, and Sparkling Skylands). Palette Town supports all flora types from every region, making it the ideal location for building any habitat that requires specific grass or flower types.
Tips
Start by building the Pretty Flower Bed to attract Eevee first. Once you have all eight Special Challenge food items, you can build the Eeveelution habitats quickly since they all share the same Seat and Table base. Place them near each other for an efficient Eeveelution collection area.
