Vinegar is a fermented condiment produced at the Brewing Barrel from a single Potato. It cannot be consumed on its own for energy recovery; instead, it is a cooking ingredient in several recipes that require a sour element. Vinegar is one of three liquid condiments the Brewing Barrel can produce, alongside Soy Sauce and Cooking Oil.
Because Potato is an all-season crop, you can produce Vinegar year-round without worrying about seasonal availability. This makes Vinegar one of the most accessible processed ingredients in the game. Having a steady supply of Vinegar ready to go lets you cook dishes like Sweet and Sour Pork and Sweet and Sour Cabbage whenever the ingredients come together.
How to Make Vinegar
Vinegar is brewed at the Brewing Barrel, a crafting station unlocked at the Junior Farmer certification rank. Place a Potato into the Brewing Barrel and wait for the fermentation process to finish. The Brewing Barrel operates on a timer rather than producing items instantly, so plan your brewing batches ahead of time.

Laba Garlic is a simple two-ingredient recipe tied to the Spring Festival event. It offers modest energy recovery and a reasonable sell price for minimal effort.
Sweet and Sour Cabbage is available early through the Aureleaf Kitchen and uses two Vinegar plus two Cabbage. It provides decent energy recovery at 74 and a solid sell price of 126g for a mid-game dish.
Sweet and Sour Pork is the most ingredient-heavy recipe that calls for Vinegar, requiring four Vinegar alongside Pork, Flour, and Sugar. The payoff is significant: 143 energy recovery and a 438g sell price make it one of the higher-value dishes in the game. This recipe is unlocked through the Island Life questline.
Sell Price and Profitability
A single Vinegar sells for 34g. Since a raw Potato sells for 33g, converting a Potato into Vinegar at the Brewing Barrel adds only 1g of profit per unit. The real value of Vinegar comes from using it as an ingredient in cooking recipes rather than selling it directly.
For example, two Vinegar (68g raw value) and two Cabbage combine into Sweet and Sour Cabbage, which sells for 126g. Four Vinegar (136g raw value) plus Pork, Flour, and Sugar turn into Sweet and Sour Pork at 438g. The profit margins on cooked dishes far exceed selling Vinegar by itself.

The Brewing Barrel produces three liquid condiments. Each takes a single crop as input. None of them restore energy on their own; they exist solely as cooking ingredients.

Vinegar has the lowest sell price among the three condiments, but its input crop (Potato) is also the cheapest to grow. Cooking Oil fetches the highest sell price at 60g, though Peanut seeds cost more. If you plan to keep all three condiments in stock, dedicate separate Brewing Barrels to each one so production runs in parallel.
Tips
Build multiple Brewing Barrels. Each barrel can only process one batch at a time. Running multiple barrels in parallel lets you brew Vinegar, Soy Sauce, and Cooking Oil simultaneously without waiting.
Stockpile Potatoes before cooking sessions. Since Potato grows in all seasons with a two-day cycle, keep a few rows planted at all times. You will always have raw material ready when you need to brew more Vinegar.
Cook rather than sell. Selling Vinegar raw nets only 34g (just 1g more than a raw Potato). Use Vinegar in recipes like Sweet and Sour Pork (438g) for dramatically higher returns.
Sweet and Sour Pork is the highest-value Vinegar recipe. At 438g sell price and 143 energy recovery, it is worth gathering the extra Pork, Flour, and Sugar to maximize your Vinegar investment.
Vinegar is a disliked gift for some NPCs. Avoid giving Vinegar as a present unless you know the recipient enjoys it. Check the gift guide before gifting.
