Completing the main story means finishing the primary questlines across all five areas: Withered Wasteland, Bleak Beach, Rocky Ridges, Sparkling Skylands, and Palette Town. This includes completing all main quests and reaching the credits.
What 100% Completion Involves
Reaching 100% completion at roughly 100 hours involves discovering all Pokemon and habitats, obtaining and crafting all recipes, gathering all collectibles across the map (including Human Records that reveal the world's lore), encountering and befriending every Pokemon, and discovering every habitat configuration in the Habitat Dex.
