Byakue is an animalistic Genma in Onimusha: Way of the Sword, encountered during the mission to clear the toxic fog choking Edo-Era Kyoto. It is one of the named foes standing between Musashi and a more open city.
The life-sapping mist hanging over Kyoto does not come from the Malice clouds directly. It seeps out of eerie plants rooted in the city, and it clears when those plants are chopped down. The mission is therefore a sequence of targets rather than a single fight, and it is one of the blockades keeping the player out of large parts of Kyoto.
Byakue appears at the end of that sequence. Before Musashi can fell the final tree, the creature charges in, which makes it the gatekeeper on the last plant rather than a random encounter along the way.
Byakue's defining behaviour is that it gets stronger from being hurt in the ordinary way. As the brawl goes on the creature becomes coated in its own blood, and the more coated it gets, the wilder it becomes. A player who trades steadily with it is feeding the escalation.
Capcom has been explicit about the counter. Raw skill may be enough to outlast the creature, but the wiser strategy is to deliver fewer but more devastating blows, which tames the beast rather than winding it up. In practice that points away from sustained pressure and towards the game's heavy-commitment options.

The two-handed katana stance, which trades speed for a longer wind-up and higher damage, is the natural fit for that instruction, as is Break Issen once the creature's stamina has been broken. The Combat System article covers the stance switch and the execution window in full.
Clearing the mission lifts the evil haze over much of Kyoto. The townsfolk who had been trapped behind the fog come back out into the streets, and more of the city becomes available to explore. Byakue is therefore one of the specific gates the game uses to widen the map, in the same way Rasho-gan gates the barriers that need Oni Strength to break.
Byakue is confirmed through Capcom's own pre-launch gameplay coverage. Its full moveset, whether the blood-frenzy state has discrete tiers, and whether the creature reappears later have not been detailed.
