Marvel's Wolverine ships with an unusually detailed set of accessibility and assist options, and they are worth reading even if you are not looking for accessibility features specifically: several of them are the clearest public description of systems the game has otherwise said little about.
Two published figures describe this game's accessibility, and they are not the same measurement. The product page lists 35 accessibility features, which is a count of the platform's standardised accessibility tags, things like clear text, large text, screen reader, and mono audio. Insomniac's own published options list runs to 133 individual option lines and is a game-specific settings inventory.
Neither figure contradicts the other, and neither should be quoted as the other.
Owners of a disc copy receive several of the options listed below through an update at launch rather than on the disc itself.

QTE Autocomplete | Completes quick-time prompts automatically. |
Global Game Speed | Slows the whole game. |
Combat Game Speed | Slows combat specifically, leaving other pacing alone. |
Boss health bar | Toggles the boss health display. |
Hero health bar | Toggles Logan's own health display. |
These sliders are the closest thing to a published difficulty system for this game. Insomniac has not described a named difficulty structure beyond the Challenge Level option itself. See Combat and Rage and Healing Factor.

Navigation Assist and the red trail shown during chase sequences are separate things. Whether Chase Assist also removes that chase trail has not been confirmed.
This game is rated Mature and its violence is deliberately explicit, so the studio built a dedicated set of controls for it.

Heartbeat Audio toggles the heartbeat sound and vibration used to locate enemies through walls.
Footstep Vibration adds haptic feedback for footsteps.

First Time User Experience is a guided setup flow offered on a first run.
Replay Cinematic plays a story cinematic again.
