Eleven regular enemy types have been confirmed for Castlevania: Belmont's Curse, either through Konami's own teaser videos or through the three-hour build shown to press. Konami has not published a bestiary, so this list is what is confirmed rather than what the game contains.
Enemies serve a second purpose beyond fighting: any of them can be used as a grapple point, and some routes are only reachable by whipping one. That is covered on Whip and Traversal. Bosses are on Bosses, and the ghosts scattered around the city are not hostile at all.

A ranged option helps against the flying types. The spear can be thrown across the screen, which is the confirmed answer to gargoyles, harpies and bats; see Weapons.

Hazards are not one-sided. Enemies can be damaged by the same environmental hazards that threaten Rose, which makes positioning a weapon in itself. More on that on Combat and Controls.
