Canopies is free-standing roof pieces that provide shelter and shade without requiring a full wall structure. Windrose offers 6 canopy pieces from the Decoration - Canopies sub-group.

Canopies provide a roof overhead without needing surrounding walls. This is useful for outdoor workshops where you still want the Roof requirement satisfied (for example, over a Workbench on a porch), for covered patios, and for open-air fishing spots along piers.
Canopies are considered roof pieces for the purpose of the Roof requirement. A single canopy placed over a station hologram satisfies the check.
Use a Canopy over your Workbench if you want the station outdoors but still need a roof overhead.

Large Canopy is the preferred piece for a shaded cooking area around your Cooking Fire because it covers a 2x2 area with a single piece.
Canopies do not block rain visually but still block line-of-sight from above for lighting purposes.
