Sentinels are mutant-hunting machines built by Bolivar Trask in Marvel's Wolverine. They run through the campaign rather than appearing once, and Insomniac's framing is that Sentinel threats emerge as Logan, Jean Grey and the members of Team X join the fight for mutant survival.
How they fit the story
Trask's technology detects mutants by their X-gene. The Sentinels are how he acts on what it finds, which is what makes them the campaign's escalation rather than one more enemy type. Official trailer copy names them among the opponents Logan is tested against, and separate hands-on sessions have met them at more than one point in the story.
Fighting them
Official material shows Logan slashing and tearing at Sentinels directly rather than working around them. One trailer shows him ripping a tendril off a Sentinel and turning it into a weapon, and a Sentinel swinging him around by one in return. Unblockable attacks are telegraphed with a red tinge in the same way as elsewhere in Combat, and a separate accessibility toggle controls whether a boss health bar is shown at all. See Accessibility Options.

The Sentinel Prototype
The Sentinel Prototype is a boss built by Trask to detect and destroy mutants. It is an imposingly large mechanical creation mounted to a wall with no legs, which does not stop it from covering the arena: it ground pounds, fires scorching lasers and missile barrages, punches, and sweeps with forearm slaps. Insomniac describes the fight as needing the combined abilities of Team X, with Mystique available as a commandable ally who can be ordered to take a sniper shot, and Sabretooth able to hurl Logan bodily at the target. It ends with Logan bursting through the machine's head. In-game dialogue presents it as an expanded version of the Sentinel met earlier in Vancouver.
