You find them out in the world and inside your Anispace, and stopping at one is the practical hinge of an expedition: you heal the party, craft items, cook food, and set the time of day before heading out again. That matters, because certain Animon and certain hidden paths only appear after dark, and some evolutions have a time-of-day requirement. Resting at a Fountain is the shortcut back: pick the time you want and set out again, rather than waiting the cycle out.
